Pecan Breaded Chicken - cooking recipe

Ingredients
    4 whole skinless and boneless chicken breasts, halved
    6 Tbsp. margarine or butter
    1/4 c. plus 2 Tbsp. Dijon mustard
    2 c. finely ground pecans
    2 c. sour cream
    ground black pepper
Preparation
    Preheat oven to 400\u00b0 and lightly grease a baking pan.
    Flatten chicken breasts with a meat pounder and lightly pepper them.
    Melt butter in a saucepan and then remove from heat.
    Whisk in 1/4 cup mustard.
    Dip chicken into butter and mustard mixture and then into ground pecans.
    Arrange chicken breasts in the baking pan.
    Place chicken in the oven and bake for 20 minutes until golden brown. Remove chicken from pan.
    Pour pan drippings into a bowl; add sour cream and mustard mixture on each dinner plate and cover with a chicken breast.
    Serves 6 to 8 people.
