Dinner Loaf * - cooking recipe

Ingredients
    1 Tbsp. oil
    1 large onion, chopped
    1 c. Kasha
    2 c. water
    2 tsp. salt
    1 lb. fresh spinach or 2 boxes frozen
    1 c. unsalted peanuts
    2 eggs
    1/4 tsp. pepper or 1/2 tsp. Tabasco
Preparation
    Heat oil in large skillet; saute onion and Kasha until onion is transparent.
    Add water and 1/2 teaspoon salt.
    Bring to boil; cover and reduce heat.
    Cook about 15 minutes, until water is absorbed.
    Cook spinach and put spinach, peanuts and one egg in blender and process on high until creamed (nuts should be coarse). Lightly beat one egg; add spinach mixture, Kasha, salt and pepper. Put into well oiled 9 x 5 x 3-inch pan.
    Bake 55 minutes at 350\u00b0. Cool 5 to 10 minutes.
    Serves 6.
