Chicken File Gumbo - cooking recipe

Ingredients
    3 lb. chicken
    24 oysters (or shrimp)
    3 sprigs parsley, minced
    2 qt. hot water
    cayenne pepper
    2 Tbsp. cooking oil
    2 Tbsp. flour
    1/2 onion, minced
    2 Tbsp. file
    salt and black pepper, to taste
Preparation
    Cut chicken in pieces; wash and wipe dry. Season well with salt and pepper; brown in hot cooking oil. Remove chicken; sift flour into hot oil and brown. Add onion and cook for 2 minutes. Add chicken, hot water, and a few grains of cayenne pepper; simmer until chicken is tender. Add oyster or shrimp and parsley; simmer 20 minutes. Remove from heat and serve with steamed rice.
