Rice O Verde - cooking recipe

Ingredients
    1 (13 3/4 oz.) can chicken broth
    1/4 c. water
    1 c. uncooked long grain rice
    1 tsp. salt
    10 oz. frozen chopped spinach
    2 tsp. dill weed
    1/4 c. Parmesan cheese, grated
Preparation
    In large saucepan, bring broth and water to boil.
    Add rice and salt; when boiling reduce to low.
    Cover and cook 10 minutes; add spinach and dill pushing spinach down into rice.
    Cover and cook 10 to 15 minutes longer until rice is tender and water absorbed.
    Remove from heat and let stand 3 to 5 minutes.
    Before serving, stir spinach and cheese into rice.
    Makes about 4 1/2 cups.
    Good as a starch and vegetable.
