Zucchini Italian Style - cooking recipe

Ingredients
    2 c. diced zucchini
    1 c. chopped onion
    1 1/2 tsp. minced garlic
    1/2 tsp. salt
    1/2 tsp. dried basil
    1/8 tsp. black pepper
    dash of cayenne pepper
    2 tsp. olive oil
    1 3/4 c. cottage cheese
    1 c. tomato puree
    1/4 c. Parmesan cheese
Preparation
    In skillet, cook vegetables and spices in olive oil for 8 minutes over medium heat.
    Stir frequently until zucchini is tender.
    Remove from heat.
    Remove 1 1/2 cups of mixture from skillet and set aside.
    Stir cottage cheese into remaining zucchini in skillet.
    Spread half of tomato puree in bottom of 2-quart baking dish.
    Heap zucchini-cheese mixture in center.
    Top with remaining tomato puree and sprinkle with Parmesan cheese. Sprinkle reserved zucchini mixture around edge of dish.
    Bake 20 minutes at 375\u00b0.
