Creole Zucchini - cooking recipe

Ingredients
    1 c. onion, chopped
    1 garlic clove, minced
    3/4 c. green pepper, chopped
    1/4 c. oil
    2 lbs. zucchini, sliced
    4 tomatoes, peeled and chopped
    1-1/2 tsp. salt
    1/4 tsp. pepper
    1/4 c. parsley, chopped
    1/4 c. Parmesan cheese, grated
Preparation
    In skillet cook onion, garlic and green pepper in oil until soft.
    Add tomatoes, zucchini, salt and pepper.
    Cover and cook about 20 minutes.
    Serve topped with cheese and parsley.
    Serves 8.
