Sweet Potato Pie - cooking recipe
Ingredients

2 lb. cooked, peeled yams, mashed (about 2 c.)
3/4 c. unsweetened pineapple juice
4 egg whites, slightly beaten
1 tsp. ground cinnamon
1/4 tsp. mace
13 oz. can nonfat evaporated milk
1/4 c. chopped pecans
Preparation

Mash potatoes by hand or in food processor with pineapple juice.
Add egg whites and spices.
Add milk gradually while mixing or blending in food processor.
Pour into 9-inch pie plate or 2-quart casserole coated with nonstick cooking spray.
Sprinkle with nuts and bake in preheated 350\u00b0
oven for 25 to 35 minutes, depending on the size of the baking dish used.
