Eggplant Casserole - cooking recipe
Ingredients

1 medium eggplant
1 green pepper
1 onion, grated
1 egg
small amount bacon fat or margarine
1 can mushroom soup
1 c. stale bread crumbs
Preparation

Boil eggplant.
Mash eggplant, pepper, onion and egg.
Add stale bread crumbs.
Add bacon fat or margarine.
Add mushroom soup.
Save few crumbs for top.
Mix and bake in buttered dish at 450\u00b0 until done.
