Swiss Potato Soup - cooking recipe

Ingredients
    1 c. potato flakes
    3 c. milk
    3/4 tsp. salt
    1 c. chicken broth
    1/8 tsp. black pepper
    2 Tbsp. butter
    3/4 c. chopped onion
    1/2 c. coarsely shredded carrot
    1/8 tsp. ground nutmeg
    1 c. shredded Swiss cheese
Preparation
    Melt margarine or butter in a saucepan.
    Add the onion and carrot.
    Cook until tender.
    Stir in milk, broth, salt, nutmeg and black pepper; bring to a boil.
    Stir in potato flakes; cook until slightly thickened, about 1 minute.
    Add Swiss cheese and stir until melted.
    Makes 4 servings.
