Chicken Cacciatore With Spaghetti(Low-Fat) - cooking recipe

Ingredients
    1 Tbsp. oil
    8 boneless, skinless chicken breast halves (about 4 oz. each)
    1 c. diced onions
    1 clove garlic, minced
    2 c. tomato sauce
    1/2 c. defatted chicken stock
    1 lb. spaghetti
    1/4 c. grated Parmesan cheese
Preparation
    In a large nonstick frying pan over medium heat, heat 1 1/2 teaspoons oil.
    Add 4 chicken breast halves and brown on both sides.
    Remove to plate.
    Repeat with remaining 1 1/2 teaspoons oil and 4 chicken breast halves.
    Add the onions and garlic. Saute 5 minutes until soft.
    Add tomato sauce and stock.
    Stir well.
    Add chicken breasts and spoon sauce over them. Cover and cook 15 minutes, or until chicken is cooked.
    Meanwhile, cook the spaghetti in a large pot of boiling water for 10 minutes or until tender.
    Drain and place on a large platter.
    Top with chicken and sauce.
    Sprinkle with the Parmesan.
