Sheepherder Lamb Shanks - cooking recipe

Ingredients
    4 meaty lamb shanks
    2 cloves garlic, minced
    1 large onion, chopped
    1/2 c. celery, chopped
    1 bay leaf
    1 tsp. oregano leaves
    1 c. tomato sauce
    1 c. red or white wine
    salt and pepper to taste
Preparation
    Combine all ingredients in Dutch oven.
    Add 2 cups water. Cover and bake at 350\u00b0 for 1 1/2 hours.
    Uncover and bake for 1 more hour or until meat is very tender and sauce thickens.
    Serve over rice.
    Serves 4.
    Wonderful with warm sourdough bread and tossed green salad.
