Chicken Gumbo - cooking recipe
Ingredients

3 Tbsp. margarine
1 c. cut okra, drained
1 small onion, chopped
1/2 c. green pepper
2 c. cooked chicken
4 c. chicken broth
1 c. whole tomatoes
1 small bay leaf
salt and pepper
1 tsp. snipped parsley
3 c. cooked rice
Preparation

Heat margarine in a 3-quart pot until melted.
Add okra, onions and green pepper.
Cook and stir until tender.
Add broth, tomatoes, bay leaf, salt and pepper.
Heat to boiling; reduce heat.
Simmer, uncovered, for 15 minutes.
Add meat and parsley. Heat through.
Serve over rice.
