Peter Franck'S Black Bean Soup - cooking recipe

Ingredients
    1 lb. black beans
    1 large onion, chopped
    3 to 4 cloves garlic, chopped
    olive oil
    2 to 3 medium tomatoes, peeled, seeded and chopped or equivalent amount canned plus juice
    salt or bouillon cubes to taste
    1/2 tsp. oregano
    1 tsp. chili pequins or crushed red pepper
    6 to 10 medium leaves sorrel or 1 Tbsp. lemon juice or 2 Tbsp. red wine vinegar
    chicken broth or cubes
    sherry (optional)
    water
Preparation
    Pick over and wash beans.
    Add water to cover and soak overnight or bring to a boil and let sit 1 hour; drain, rinse and add water to cover plus 1 bouillon cube or a teaspoon of salt. Cook until done, 1/2 to 1 hour.
