Ingredients

1/4 c. olive oil
3 large, boneless chicken breasts (1-inch cubes)
1 onion, chopped
fresh basil to taste or 1 tsp. dried
1/4 c. finely chopped, drained oil packed sun dried tomatoes
1 c. grated cheese
4 cloves garlic, chopped
1 carrot, peeled and cut into matchsticks
1 lb. pasta (any type)
Preparation

Heat oil.
Add chicken and saute until cooked, about 6 minutes.
Remove chicken and keep warm.
Add to same oil the onion and garlic; saute until tender.
Add sun dried tomatoes and chicken and continue cooking about 2 minutes.
Transfer to bowl with chicken.
Add pasta and cheese; mix well.
