Fried Pies - cooking recipe
Ingredients

1 lb. dried apricots
1 c. sugar
1/4 to 1/2 c. water
2 sticks butter, softened
1 (8 oz.) pkg. cream cheese
2 c. flour
1/2 tsp. salt
Preparation

Combine apricots, sugar and water in a medium saucepan and cook until apricots are tender; set aside.
Mix the cream cheese and butter together.
Sift flour and salt together and blend in cream cheese-butter mixture until thoroughly mixed.
Chill several hours or until dough is easy to handle.
Roll dough thin and cut in circles with an empty coffee can.
Place 1 to 2 teaspoons of apricot mixture in center of each circle.
Fold over and pinch edge together with fork.
Place on an ungreased baking sheet and bake at 375\u00b0 for 15 to 20 minutes.
Top with powdered sugar glaze, if desired.
Makes approximately 26 pies.
