Lemon Cookies(Diabetic) - cooking recipe

Ingredients
    1/2 c. shortening
    1 Tbsp. Sucaryl
    1 egg
    1 Tbsp. water
    1 Tbsp. lemon juice
    1 Tbsp. lemon peel
    1 tsp. vanilla
    1/2 c. dry shredded coconut
    2 c. flour
    1 tsp. baking powder
    1/2 tsp. salt
Preparation
    Cream shortening in a small mixer bowl on high speed.
    Add Sucaryl, egg, water, lemon juice, peel and vanilla.
    Beat until blended well.
    Mix in coconut.
    Sift dry ingredients together; add to creamed mixture, mixing thoroughly.
    Form dough into a roll 2 inches in diameter; wrap in wax paper and chill until firm.
    Cut into thin slices and bake on ungreased cookie sheet in oven at 400\u00b0 for 10 to 15 minutes.
