Zucchini Casserole - cooking recipe
Ingredients

2 1/2 c. peeled and thinly sliced zucchini
1/4 c. thinly sliced onions
2 to 3 Tbsp. vegetable oil
1 can cream of chicken soup
8 oz. sour cream
1 c. shredded carrots
8 oz. stuffing mix (bread crumbs)
1 c. melted butter
Preparation

Saute zucchini and onion in oil until tender and drain.
Mix together soup, sour cream and carrots.
Add to zucchini and onion. Melt butter and combine with stuffing mix.
Put half of the stuffing mix on the bottom of a medium size baking dish.
Cover it with the zucchini mixture.
Top with remaining 1/2 of stuffing mix. Bake at 350\u00b0 for 30 to 40 minutes.
