Apple Cake - cooking recipe

2/3 c. oil
2 eggs
3 c. apples, pared, chopped
1 1/2 c. sugar
1 3/4 c. unsifted plain flour
1 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
1 tsp. vanilla
1 c. chopped pecans
Preparation

Preheat oven to 325\u00b0.
Grease a 9 x 13-inch baking pan.
Beat oil and eggs until foamy.
Stir in apples and sugar.
Mix flour, soda, salt and cinnamon; stir in apple mixture.
Stir in vanilla and nuts.
Pour batter into baking pan.
Bake 45 minutes or until top springs back when touched lightly.
