Potato Croquettes(Crocke Di Patate) - cooking recipe

Ingredients
    1 lb. potatoes
    2 Tbsp. grated Romano cheese
    1 egg
    1/2 tsp. parsley
    1/4 c. bread crumbs
    1/2 c. flour
    1/2 c. olive oil
    salt and pepper to taste
    1 clove minced garlic
Preparation
    Boil potatoes with skins in salted water until tender.
    Drain. Peel.
    Mash until smooth.
    Let it cool.
    In a bowl, mix potatoes, cheese, egg, garlic, parsley, bread crumbs, salt and pepper.
    Form into oval-shaped croquettes.
    Roll in flour.
    Heat olive oil in large skillet and saute croquettes until golden brown on both sides.
