Pecan Cake - cooking recipe

1 lb. light brown sugar
1 lb. butter or margarine
1 lb. shelled pecans
1/2 lb. candied cherries
1/2 lb. candied pineapple
6 eggs, separated
1 1/2 oz. pure lemon extract
4 c. flour
1 tsp. baking powder
Preparation

Cream butter.
Add sugar; cream well.
Add egg yolks, one at a time; beat well after each egg, as extract is all the liquid used. Alternate with 2 cups of flour to which the baking powder has been added.
Dredge fruit and nuts with the other 2 cups of flour; add to mixture, then add flavoring, then add stiffly beaten egg whites.
Let set overnight.
Put into well-greased cake pan the next morning and bake for 3 to 3 1/2 hours in a 220\u00b0 oven.
