Tomato And Rice Soup - cooking recipe
Ingredients

1 large onion, finely chopped
1/4 c. butter, melted
2 (14 1/2 oz.) cans stewed tomatoes
2 1/2 c. water
2 bouillon cubes (chicken or beef)
1/3 c. uncooked rice
1 tsp. dried thyme
1/2 tsp. pepper
Preparation

Saute onion in butter until tender.
Puree tomatoes in blender.
Add tomato puree, water, bouillon cubes, rice, thyme and pepper to onion mixture.
Bring to boil.
Cover, reduce heat and cook 25 to 30 minutes, until rice is tender.
Yields approximately 7 cups.
