Skillet Supper With Italian Sausage - cooking recipe

Ingredients
    6 medium red potatoes
    1 1/2 tsp. salt, divided
    2 Tbsp. oil
    3/4 c. chopped onion
    2 green onions
    1 large tomato, chopped
    1 1/2 tsp. basil
    1/4 tsp. oregano
    1/8 tsp. thyme
    fresh ground pepper
    3/4 lb. Italian sausage
    4 oz. Cheddar, grated
    sour cream or yogurt
Preparation
    Quarter potatoes; put in 2-quart saucepan.
    Add enough water to cover potatoes.
    Add 1 teaspoon of salt.
    Bring to boil over high heat, uncovered; reduce heat to medium and simmer until tender, 10 to 15 minutes.
    Drain in colander.
    In heavy skillet, heat oil.
    Add potatoes; saute until browned, stirring occasionally, about 10 minutes.
    Add onions, tomato, basil, oregano, thyme, 1/2 teaspoon salt and pepper.
    Saute until onions are limp, 3 to 5 minutes.
    Put mixture in large casserole.
    Brown the sausage and add to mixture.
    Sprinkle cheese on top.
    Broil 3 minutes until cheese melts.
    Top with sour cream or yogurt if desired.
