Zucchini Muffins - cooking recipe

Ingredients
    2 c. shredded zucchini
    1 c. oil
    1/3 c. molasses (or Karo)
    2 1/2 c. flour
    1 tsp. baking soda
    1 tsp. cinnamon
    1 c. chopped walnuts
    3 eggs
    1 c. sugar
    1 tsp. vanilla
    1 tsp. salt
    1/2 tsp. baking powder
    1 c. raisins
Preparation
    Beat eggs to blend.
    Add oil, sugar, molasses and vanilla. Continue beating until thick and foamy.
    Combine dry ingredients; add to egg mixture.
    Beat until just blended.
    Add zucchini, raisins and nuts.
    Mix gently.
    Makes 24 muffins.
    Bake at 350\u00b0 for 25 minutes.
