Potato Candy - cooking recipe

Ingredients
    1 medium potato
    1 tsp. vanilla
    peanut butter
    dash of salt
    1 lb. or more powdered sugar
Preparation
    Boil potato in skin.
    When tender, mash until smooth, adding the salt and vanilla.
    Add powdered sugar until mixture is stiff enough to roll.
    On a powdered sugar surface, roll the mixture until it's about 1/4-inch thick.
    (You may have to divide the mixture in half to do this.) Spread the surface with a thin layer of peanut butter.
    Roll it all up like a jelly roll and chill for a few hours in the refrigerator.
    Cut the roll into slices.
