Low-Fat Strawberry Topping(Diabetic) - cooking recipe

Ingredients
    1/2 c. frozen sugar-free apple juice concentrate, thawed
    2 Tbsp. cornstarch
    4 c. fresh or frozen strawberries (no sugar added)
    6 packets Equal sugar substitute
Preparation
    Blend apple juice and cornstarch in a saucepan (no heat). Stir mixture until well blended.
    Add strawberries.
    Cook over medium heat, stirring constantly, until mixture thickens and boils.
    Continue stirring and boiling for 1 minute.
    Remove from heat and allow to cool for 5 minutes.
    Stir in sugar substitute. Yields 3 2/3 cups.
