Beet Pickles - cooking recipe

Ingredients
    2 c. sugar
    1 1/2 tsp. salt
    3 1/2 c. vinegar
    1 1/2 c. water
    Dutch oven full of beets, cooked and sliced or whole
Preparation
    Boil first 4 ingredients and pour over beets that have been put in jars.
    Process 30 minutes in water bath.
    Yields 7 pints.
