Prune Bread - cooking recipe
Ingredients

2 c. sugar
1 c. oil
3 eggs
1 jar junior prunes with tapioca (or 2 small jars)
2 1/2 c. plus 1 Tbsp. flour
1 tsp. cinnamon
1/2 tsp. salt
2 tsp. baking soda, mixed in 1 c. buttermilk
1 tsp. vanilla
1 c. chopped walnuts
Preparation

Put all ingredients in a bowl, except the walnuts, and mix well.
Add nuts.
Bake in a small greased loaf pans at 350\u00b0 for 1/2 hour, then reduce heat to 325\u00b0 and bake for 1/2 hour.
Let cool for 25 minutes or so, then remove from pans and cool on racks.
Keeps well in refrigerator or freezes well.
(I use three 3 1/2 x 7 x 2-inch deep pans.)
