Ingredients

3/4 c. sugar
5 Tbsp. flour
1/4 tsp. salt
2 c. milk
3 egg yolks, slightly beaten
1/3 c. sugar, caramelized
1 Tbsp. butter
1/2 tsp. vanilla
1 baked 9-inch pie shell
1/2 c. cream, whipped and sweetened
1/2 c. coconut
Preparation

Combine sugar, flour and salt in top of double boiler. Add milk and egg yolks, mixing well.
Place over rapidly boiling water and cook 10 minutes, stirring constantly.
Remove from fire, but allow to remain over hot water.
Caramelize sugar by placing 1/3 cup sugar in iron skillet over medium flame and stirring constantly until melted and straw colored. Add at once to thickened mixture. Add butter and vanilla.
Garnish pie with a ring of whipped cream and sprinkle cream with coconut.
