Ingredients

1 c. uncooked regular, quick or instant Cream of Wheat cereal
2 Tbsp. granulated sugar
1/2 tsp. grated orange rind
3/4 c. orange juice
2 eggs
1 tsp. vanilla extract
16 slices French bread (1 to 1 1/2 inches thick)
Preparation

Place Cream of Wheat cereal on wax paper; set aside.
In a medium bowl, beat together the sugar, orange rind, orange juice, eggs
and vanilla extract.
Dip each bread slice into orange juice mixture just to soak.
Coat with Cream of Wheat cereal.
Dip again in orange juice mixture.
Arrange all slices in single layer on large cookie sheet.
In large skillet or griddle, melt margarine over medium-low heat; fry 2 or 3 bread slices at a time to brown both sides.
Makes 4 servings.
