Sweet Potato Bake - cooking recipe
Ingredients

3 lb. sweet potatoes
1 c. brown sugar, packed
1 1/2 Tbsp. cornstarch
1/4 tsp. salt
1/8 tsp. cinnamon
1 c. apricot nectar
1/2 c. water
2 tsp. grated orange peel
2 Tbsp. butter or margarine
1/2 c. chopped pecans
miniature marshmallows (optional)
Preparation

Cook potatoes in salted water until tender, but not mushy; peel while hot, then cool.
Combine brown sugar, cornstarch, salt and cinnamon in heavy saucepan.
Stir in apricot nectar, water and orange peel.
Bring to full boil and stir constantly.
Remove from heat and stir in butter.
Cool slightly.
Stir in pecans.
Cut potatoes in half and put in loaf pan.
Pour sauce over potatoes so all are glazed.
Add marshmallows, if desired.
Bake, covered, at 375\u00b0 for 25 minutes or until sauce is bubbling.
Makes 6 to 8 servings.
