Zucchini Bread - cooking recipe
Ingredients

3 eggs
2 c. sugar
1 c. oil
1 Tbsp. vanilla
2 c. coarsely grated zucchini (unpeeled)
2 c. flour
1 tsp. cinnamon
2 tsp. baking powder
1 tsp. salt
1/4 tsp. baking soda
1 c. chopped pecans or walnuts (optional)
8 oz. cream cheese (to spread on top, put on before eating; optional)
Preparation

Beat eggs until frothy. Beat in sugar.
Add oil and vanilla and beat until thick and lemon colored.
Add loosely packed, grated zucchini.
Sift dry ingredients and add to egg mixture. Fold in pecans.
Pour into 2 (8 x 4-inch) greased and floured loaf pans or 4 small loaf pans.
