Spoon Bread - cooking recipe

Ingredients
    2 1/2 c. white cornmeal
    2 1/2 c. boiling water
    1 1/2 tsp. melted butter or shortening
    1 3/4 tsp. salt
    3 eggs, separated
    1 c. buttermilk
    1 tsp. baking soda
Preparation
    Gradually stir cornmeal into 2 1/2 cups boiling water.
    Add shortening or butter and salt.
    Cool slightly.
    Beat egg yolks; add to mixture.
    Stir in buttermilk, mixed with baking soda.
    Fold in stiffly beaten egg whites.
    Turn into buttered casserole or baking dish.
    Bake 40 minutes at 425\u00b0.
    Serves 8.
