Sweet-N-Sour Chicken - cooking recipe

Ingredients
    2 lb. boneless chicken breasts
    3 Tbsp. water
    2 Tbsp. cider vinegar
    1 Tbsp. cornstarch
    1 (20 oz.) can pineapple chunks (heavy syrup)
    4 Tbsp. soy sauce
    1/2 tsp. ground ginger
    1 medium green pepper
    1 medium red pepper
Preparation
    In large shallow microwave-safe dish, toss chicken with 2 teaspoons soy sauce and ginger.
    Cut pepper into strips.
    In large bowl, combine vinegar, water, cornstarch and 2 teaspoons soy sauce; mix well.
    Stir in pineapple chunks and their syrup and the pepper strips.
    Microwave on High (100%), stirring once, 3 minutes or until sauce is thickened.
    Cover chicken with waxed paper; microwave on High for 6 minutes, stirring after 3 minutes with slotted spoon.
    Add chicken to pineapple mixture.
    Serve with cooked rice.
