Scalloped Eggplant - cooking recipe

Ingredients
    1 medium eggplant, peeled
    3 medium onions, chopped
    2 eggs, beaten
    1 c. bread crumbs
    1/2 c. grated Cheddar cheese
    2 Tbsp. butter
    1 tsp. salt
Preparation
    Cut eggplant in cubes.
    Cook eggplant and onions together in water for 20 minutes.
    Drain thoroughly.
    Add eggs, butter, bread crumbs, cheese and salt.
    Mix well.
    Place in greased 9 x 13-inch baking dish.
    Bake in a 325\u00b0 oven for about 1 hour or until done.
