Cheese Broccoli Casserole - cooking recipe

Ingredients
    1/2 lb. fresh broccoli, cut into spears
    1 c. quick cooking rice
    1 Tbsp. minced dried onion
    2 beaten eggs
    1/2 c. Ricotta cheese
    1/2 c. shredded Mozzarella cheese
    1 (2 oz.) sliced pimiento, chopped
    1/2 c. milk
    1 c. shredded cheese
Preparation
    Cook broccoli in salted water for about 15 minutes or until tender.
    Prepare rice with dried onion according to rice package. Combine cooked rice, eggs, Ricotta cheese, pimento and 1/2 teaspoon salt.
    Stir in milk.
    Turn mixture into a 10-inch pie plate.
    Arrange broccoli atop.
    Sprinkle with cheese in center. Bake for 20 minutes or until almost set. Bake at 350\u00b0.
