Zucchini Relish - cooking recipe
Ingredients

10 c. ground zucchini squash
4 c. ground onions
5 Tbsp. salt
2 1/4 c. vinegar
6 c. sugar
1 Tbsp. dry mustard
2 tsp. celery seed
1/4 tsp. black pepper
1 Tbsp. turmeric
1 Tbsp. cornstarch
1 Tbsp. nutmeg
a few red peppers for coloring
Preparation

Mix together ground zucchini squash, ground onions and salt. Let stand overnight; drain, rinse and rinse again. Add remaining ingredients. Cook slowly until clear (about 30 minutes). Seal hot. One half of recipe makes 3 pints.
