White Bean, Tomato And Basil Salad * - cooking recipe

Ingredients
    1 lb. dried white beans
    coarse salt to taste
    2/3 c. extra virgin olive oil
    1 small red onion, chopped fine
    freshly ground pepper to taste
    3 to 4 plum tomatoes, chopped
    1/2 c. basil leaves, snipped
Preparation
    Soak the beans in water to cover overnight.
    Drain and cover with fresh water.
    Simmer until tender (about 1 hour or more), adding salt to taste after first 30 minutes.
    Drain the beans and put them in a serving bowl.
    Add the oil and onion and toss thoroughly while the beans are still hot.
    Just before serving, add the tomatoes and basil leaves.
    Toss and correct seasoning. Serves 6 to 8.
