Dollie'S Eggplant Casserole - cooking recipe

Ingredients
    1 large or 2 small eggplant
    1/2 tsp. salt
    pepper
    2 c. canned tomatoes, drained
    1/2 c. finely chopped onion
    2 eggs, well beaten
    2 c. cornbread crumbs
    2 to 3 Tbsp. oleo
    milk to cover
    grated Cheddar cheese
Preparation
    Peel and cook eggplant in water; drain.
    Add salt and pepper. Mash.
    Saute onion in oleo.
    Mash tomatoes; mix with onion. Combine with eggplant.
    Add beaten eggs and bread crumbs.
    Grease casserole dish; spoon in mixture.
    Cover with milk; top with cheese.
    Bake at 375\u00b0 until hot through and cheese is melted.
