Ingredients

2 c. sugar
2 heaping Tbsp. flour
1 stick margarine
4 eggs
1 c. buttermilk
2 tsp. vanilla
2 c. Angel Flake coconut
Preparation

Mix together dry ingredients first to prevent flour from lumping.
Add margarine, then eggs, one at a time, buttermilk and vanilla.
Stir in coconut.
Pour into 2 pastry shells and bake 10 minutes at 450\u00b0; then reduce heat to 375\u00b0 and bake until done. Top is very brown (about 40 minutes).
