Ensalada Valenciana(Valenciana Salad) - cooking recipe
Ingredients

1 large head endive or lettuce, chopped
olives, pitted (as much as desired)
1 clove garlic, minced
1 finely minced onion
1 tomato, sliced
salt
1 hard-boiled egg
3 Tbsp. oil
2 Tbsp. vinegar
1/4 lb. tuna, flaked
Preparation

Soak endive or lettuce in water; drain.
Place in salad bowl with olives, garlic, onion, tomato and salt.
Separate egg yolk from white.
Mash yolk.
Add oil and vinegar gradually.
Chop egg white; add tuna to salad.
Salt to taste; pour egg yolk mixture over salad.
Yield:
4 servings.
