Ingredients

3/4 c. butter, softened
3 egg yolks
2 1/2 c. cornstarch
1/2 tsp. baking soda
1 tsp. vanilla
1 1/2 c. sugar
2 c. flour
2 tsp. baking powder
1 lemon peel
coconut, finely shredded
jelly, jam or caramel
Preparation

Mix together cornstarch, flour, soda and baking powder.
Blend butter and sugar together.
Add egg yolks, one at a time.
Add lemon peel and vanilla.
Mix, blend.
Add flour mixture and mix well.
Roll out 1/4 of dough and cut in 1 1/2-inch rounds.
Repeat with remaining dough.
Place on cookie sheets.
Bake at 375\u00b0 for 8 to 10 minutes.
Cool on racks.
When cool, make sandwich with jelly, etc. as filling.
Roll edges in very finely shredded coconut.
Store in airtight containers.
