Zucchini Muffins - cooking recipe
Ingredients

1 1/2 c. whole wheat flour
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/8 tsp. salt
2 tsp. cinnamon
1 egg
1 c. grated zucchini
1/2 c. honey
1/3 c. vegetable oil
1 tsp. vanilla
3/4 c. chopped walnuts (optional)
small amount of milk (optional)
Preparation

Combine all dry ingredients.
Make a well in the center. Combine egg, zucchini, honey, oil and vanilla.
Mix well and pour into well of dry ingredients.
Stir until moist.
Stir in walnuts. Spoon into greased muffin pans.
Bake at 400\u00b0 for 18 to 20 minutes.
Yields 1 to 1 1/2 dozen.
