Potatoes Basquaise - cooking recipe

Ingredients
    6 medium all-purpose potatoes (2 lb.)
    1 tsp. salt
    6 slices bacon, diced
    1 c. finely chopped onion
    1/4 c. chopped parsley
    8 eggs
    1/4 tsp. black pepper
    1/4 tsp. paprika
Preparation
    Peel and rinse potatoes.
    Place them in a 3-quart pot.
    Bring to a boil.
    Reduce heat and simmer for 20 minutes.
    Drain.
    When cooled, cut into 1/8-inch slices.
