Lentil Salad - cooking recipe

Ingredients
    1 (16 oz.) bag dried lentils
    1 c. chopped Italian parsley
    2 medium or 1 large tomato, diced
    1/4 c. diced red onions
    2 cloves crushed garlic
    1/2 c. seasoned rice vinegar
    2 Tbsp. olive oil
    fresh ground pepper
    2 Tbsp. fresh lemon juice
Preparation
    Cook lentils according to package directions.
    Drain.
    While lentils are still warm, add vinegar, oil and lemon juice.
    Mix well.
    Chill for 1/2 hour to 45 minutes.
    Add remaining ingredients and chill for at least 1 hour.
    Mix occasionally while it is chilling.
