Fruited Breakfast Muffins - cooking recipe
Ingredients

2 c. all-purpose flour
1 1/3 c. sugar
2 tsp. baking soda
1/2 tsp. salt
2 c. grated carrots
1/2 c. raisins
1/2 c. coconut
1/2 c. chopped nuts
1 (8 oz.) can crushed pineapple
1 c. vegetable oil
3 eggs
2 tsp. vanilla
Preparation

Combine first 4 ingredients; stir in carrots and next 4 ingredients.
Add oil and remaining ingredients.
Place in baking cups.
Fill 2/3 full.
Bake in a 350\u00b0 oven for 25 minutes or until golden brown.
