Zucchini Relish - cooking recipe
Ingredients

10 c. zucchini, chopped through food processor
4 large onions, chopped through food processor
1 large red pepper, finely chopped
1 large green pepper, finely chopped
4 1/2 c. sugar
1 tsp. nutmeg
1 tsp. dry mustard
1 tsp. turmeric
2 tsp. celery seed
1/2 tsp. ground black pepper
1 well rounded Tbsp. cornstarch
2 1/2 c. cider vinegar
Preparation

Mix together zucchini, onions and peppers in large container. Sprinkle with 5 tablespoons salt.
Mix well and let stand overnight.
In morning, place mixture in colander and rinse with warm water; drain well.
Combine sugar, nutmeg, dry mustard, turmeric, celery seed, black pepper, cornstarch and cider vinegar in large pot.
Bring to a boil.
Add zucchini-onion-pepper mixture and cook slowly for 20 minutes.
Stir occasionally.
Place in clean, hot pint jars and seal with lids.
Relish may be processed in hot water bath for 10 minutes.
Yield:
6 to 7 pints.
