Hungarian Goulash Soup - cooking recipe
Ingredients

2 lb. beef
1 medium onion
4 carrots, diced
2 qt. water or more, according to taste
4 potatoes, diced
1/2 Tbsp. caraway seed
salt and pepper to taste
2 Tbsp. butter
1 Tbsp. paprika
Preparation

Cut beef into 1-inch squares.
Brown chopped onions in butter, then add paprika.
Fry slightly being careful not to darken paprika.
Then add beef, salt and pepper.
Simmer until is tender in its own juices being careful not to scorch.
Then add carrots and water and let simmer.
Cook until carrots are partly cooked.
Then add potatoes; cook until potatoes are done (about 1 hour).
Serve with dumplings, if desired.
