Health Club Tuna Salad - cooking recipe

Ingredients
    1 (16 oz.) can mixed fruit in juice
    1 1/2 tsp. curry powder
    6.5 oz. fresh tuna, cooked without fat
    1 c. cucumber, sliced
    butter lettuce leaves
    1 c. cracker wheat
    1/2 c. green onion, sliced
Preparation
    Pour juice from fruit into measuring cup.
    Mix in curry powder.
    Add enough water to make 2 cups of liquid.
    Bring to a boil.
    Pour over cracked wheat in bowl; let stand 30 minutes while liquid soaks in and wheat cools.
    Mix fruit, tuna, cucumber and green onion.
    Chill.
    Serve on lettuce.
