Glorious Morning Muffins - cooking recipe
Ingredients

2 c. all-purpose flour (may use 1 c. whole wheat flour)
2 1/2 tsp. baking soda
1 Tbsp. cinnamon
1/2 tsp. salt
3/4 c. raisins
1/2 c. nuts
1 1/2 c. shredded carrots
1 1/2 c. shredded apple (with skin on)
1/2 c. shredded coconut
1/2 c. raisins
3/4 c. oil
1/2 c. chopped nuts
1/2 c. honey
1/2 c. sugar
3 beaten eggs
1 1/2 tsp. vanilla
1/2 c. orange juice
Preparation

Combine first 5 ingredients. Stir in honey, sugar, eggs and oil. Add the vanilla and orange juice.
Add remaining ingredients, stirring just until mixed. Grease or paper 12 cup muffin tins. Fill 3/4 full.
Bake in preheated oven at 375\u00b0 for 18 to 20 minutes. Cool on rack.
Yields 24.
