Hawaiian Sweet Potato - cooking recipe

Ingredients
    6 medium sized sweet potatoes, cooked and mashed
    2/3 cup drained crushed pineapple
    1/4 cup orange juice
    1/3 cup Half & Half coffee cream
    1/4 cup firmly packed brown sugar
    1/4 cup oleo
    1/4 tsp. salt
    1/2 tsp. cinnamon
    1/4 cup flaked coconut
Preparation
    Combine sweet potato, pineapple, orange juice and mix well.
    Combine Half and Half, brown sugar and oleo, cook over low heat, stirring constantly until oleo is melted.
    Add to potato mixture along with salt and cinnamon.
    Blend thoroughly.
    Pour into lightly greased shallow casserole dish.
    Sprinkle with coconut.
    Bake at 400 degrees about 10 minutes or until coconut is lightly toasted.
